Midday brasserie with an open kitchen and a menu that shifts weekly based on regional harvests. Lunch service 11:30 a.m. to 3:00 p.m.; light supper 5:00 p.m. to 9:00 p.m. Walk-ins welcome; reservations recommended for parties of four or more.

Counter Nine
Evening tasting counter with nine seats facing the pass. A fixed progression of courses paired with natural wines. Two seatings nightly at 6:30 and 9:00 p.m. Reservation required. This venue is separate from the 18+ gaming floor.
Sourcing philosophy
Ingredients travel the shortest reasonable distance. Produce comes from contracted farms within a 120-kilometer radius. Seafood is line-caught and delivered whole. Proteins are butchered in-house. Menus list origin where it matters to the guest.
Dietary requirements — vegetarian, vegan, gluten-free, and allergen-specific — are accommodated with advance notice. Contact the dining team before arrival for complex needs.
In-room dining
All three venues deliver to suites during their respective service hours. Trays arrive on ceramic and linen — no disposable service ware in guest rooms. A simplified late menu is available until midnight for suite guests.
